Bitter-tasting foods are not preferred in most cases; a few exceptions include coffee, beer, and wine. Even though humans are averse to bitter taste, pharmaceutical compounds with physiological benefits often taste bitter. Therefore, the masking of bitterness is considered to be important in food processing and pharmacology.
